Let’s Talk: Accountability

So I just started journaling again in April to help keep me accountable on gratitude and prayer. If I don’t write it down it is like I didn’t do it. I need accountability in my life. I need my sister texting to ask what mile I am at in my 1000 mile journey this year, as of today, 185. I need my exercise buddy at the pool to call me and be excited and talk and distract me from my legs feeling like jelly. Dinner club to cook with me and to step up my cooking game. I just can’t bring peanut butter sandwiches everywhere. And I need the friend who says they are praying for me, and asks me what I have been learning lately and calls me out on when they know I keep continuing to disobey. Accountability is important to growth. Jesus had a group of disciples around him and they held each other accountable. “Peter, do you need that cookie?” “Simon, did you really not believe us when we told you we saw Christ” “John, come join us for prayer group tonight” And other examples for sure. It tells us over and over again in the Bible that meeting together is good “Where two or three are gathered there I will be” And with those friendships and accountability it can help us change and become more like Christ. Growing up I one of my dad’s friends would always ask me randomly what I read in the Bible that day, and when I said nothing he would suggest a certain passage of scripture. I never felt judged for not reading my Bible but encouraged to go and read.
I know that I’m not doing what is right when I don’t want to be held accountable for anything. What is something you are glad someone held you accountable for?


Cooking Challenge 2016

I love to bake, and I want to love to cook more.  I want to challenge myself to know more and be even more comfortable in the kitchen.  One of my favorite activities is to take a cooking class and learn tips and tricks to make life in my kitchen easier.


Here is what I would like to make this year:

  1.  Meringue pie
  2. Homemade Ravioli
  3. Chinese food – sesame chicken, kaipow chicken, cashew chicken (one or more of these) – 2/6/16 – Made chicken salad rolls
  4. Drunken Chicken 2/6/16: Recipe found here
  5. Cheesecake
  6. Go To Salad – that packs well for lunch -tried Asian chicken salad with ramen noodles (okay- dressing needs to be separate for work) 3-9-16 Mojito Shrimp Salad – very good 4/6/16
  7. Homemade S’mores (marshmallows & graham crackers)
  8. Can fruits or veggies
  9. Break Down a chicken 3-28-16
  10. Coq au Vin
  11. Passion fruit tart or pie
  12. Shrimp Pad Thai

I promise to share recipes of those that I have tried, follow links and to take pictures in the future of some of my cooking adventures or misadventures whatever they may be.


I know it is almost May, but to accomplish my Eek List  I knew I had to set some goals year by year to make them.


My goals for 2016 are:

  1. Walk 1000 miles this year (sub goal: participate in 2 5 K’s this year)
  2. Start or join a dinner club
  3. Save up enough for a down payment for a house (sub goal: keep track of all spending)
  4. Travel: See a natural wonder, go away for a girls weekend
  5. Cooking challenge list
  6. Take a Photography Class
  7. Grow my hair past my shoulder blades and Donate Hair
  8. Make a gratefulness scrapbook for this year
  9. Homemade Jelly (make and give)
  10. Make cards and a birthday calendar with addresses – send out 1 a month (at least)
  11. Adoption – find an agency and start process for adoption or foster care
  12. Start and keep up a prayer journal/calendar

I have been working more steadily on some then others and for some, walking 1000 miles specifically, I need a huge motivation kick in the butt.

So this is my no more excuses putting it out there for the world to see.
